Good Carbs versus Bad Carbs...

Vegetarian Nutrition - The word “carbs” is everywhere these days, and there are many diets which are either “for” carbs or “against” carbs.

The public is getting confused about all this confusion over carbs, and nobody seems to really understand what to do when dieting these days.

So we’ll explain the simple truth about carbs and what it takes to begin losing weight immediately.

A “carb” is just a short hand way of saying “a carbohydrate”.  A carbohydrate is a special type of calorie which contains extra energy, which is why you’ll feel more energetic when eating foods which are rich in carbohydrates. For example, if you eat a bag of candy or a piece of cake then you’ll feel very energetic afterwards, because these are foods which are rich in excess carbs.

The truth is that not all carbs are fattening, because there are different types of carbs — there are “good carbs” and there are “bad carbs” too.  However, if you are overweight (or if you’re one of those people who has been overweight since childhood) then it’s 99% certain that your daily foods contain too many bad carbs — and not enough good carbs.

Sugar is a type of bad carb, and most people think they know how to avoid sugar. But the truth is that sugar has MANY different forms which are very hard to spot in foods. …And this is why you’ll never lose weight until you learn to eat good carbs only. For example, most people falsely believe that eating foods sweetened with honey are somehow healthier than eating foods sweetened with sugar — but in reality honey is just as fattening as sugar. In fact, honey is filled with the same fattening carbs as sugar.

Why is this true?

This is true because honey (and other bad carbs) cause your blood sugar level to rise sharply after a meal (which is why you’ll feel energetic after eating a honey based meal).  This causes you to gain weight because when your blood sugar rises then your body is forced to over-produce a hormone called “insulin” (because insulin is needed to help process excess blood sugar). …And when your body produces too much insulin then fat storage will occur.

But if you eat good carbs (instead of bad carbs) then your blood sugar level will not skyrocket after each meal, and thus you can burn fat and lose weight much easier. Plus, you’ll feel energetic all day on a more even level, without the “highs” and “lows” that most overweight people experience.

Vegetarian Nutrition - Iron is an important element for your body to utilize in hemoglobin, which transports oxygen in your blood to all the other parts of your body. It is also necessary for many other metabolic reactions in your body. Iron deficiency and the resulting anemia is the most widespread mineral deficiency.

Iron is needed for your body to form the red pigment in your blood, also known as hemoglobin. The iron within your hemoglobin combines with oxygen and takes it throughout your whole body, its organs and its tissues. The average human body contains between 3.5 and 4.5 grams of iron, and two-thirds of that is in your hemoglobin. The rest of your iron is stored in your bone marrow, spleen and liver. A very small amount is also stored in myoglobin, which stores oxygen in the tissue of your muscles.

If your body is deficient in its stores of iron, it can lead to anemia. If the iron stores become depleted, then your synthesis of hemoglobin can be inhibited. Symptoms of anemia include pallor, loss of appetite, insomnia, headaches, breathlessness, lack of stamina and tiredness. All of these symptoms are associated with a lowered oxygen supply to your organs and tissues. Iron is also important to your immune system, so people with low levels of iron have a lower resistance to infection.

Research has also shown that low levels of iron can be associated with impaired function of the brain. Iron deficiency in infants can result in behavior problems and impaired learning ability.

Iron deficiency is the most common nutritional problem worldwide. It has been stated by researchers that two-thirds of children and women of child-bearing age in third-world countries suffer from a lack of iron. And one third of the people in those areas suffer from severe iron deficiency and anemia.

If you are a vegetarian, you will not get iron from meat, which is a usual source of haem. In plant foods, you will find only non-haem iron. This iron is harder to absorb, so more plant foods must be eaten to take in proper amounts of iron.

The rate at which your body can absorb iron from vegetables is also influenced by the other things you may eat with your meals. Phosphates in plant foods can inhibit the rate of absorption, as can the tannin that is often found in tea. Fiber may also inhibit iron absorption.

Vitamin C helps your body to absorb plant-type iron. These include leafy green vegetables, green peppers and citrus fruits. Alcohol, amino acids, sugars and citric acid also helps your body better absorb iron.

Some of the better foods high in iron for a vegetarian life include dried fruits, kidney beans, lentils, blackstrap molasses, leafy green vegetables and whole grain flours and cereals.

Vegan Cheesy Lasagna

This recipe was soooooo unbelievable...even two of my meateating friends loved it. i, howe'ver, made it in a 9x13 dish. i used a pound of whole wheat lasagna noodles, 2 and 1/2 jars (26 oz each) of classico tomato and basil spaghetti sauce, i didn't use any tomato sauce, 24 oz of 5 spice tofu (i forget the brand), and 20 oz of frozen leaf spinach. this is the best lasagna ive ever had. including me, there were 5 people, and i still have about half left...it makes alot.

Vegan Cheesy Lasagna
